Santa Maria-style BBQ is unique to the central coast of California, specifically Santa Maria, CA. Our method of barbecue goes back to the early 19th century! This style specializes in beef tri-tip and top sirloin, but nowadays of course we incorporate all kinds of meat and vegetables, such as chicken, ribs, all sorts of grilled veggies and fruit, and just about anything that might be cooked on a grill. 

One of the things that makes Santa Maria-style BBQ so unique and delectable is that our meat is cooked on an open grill over red oak, which is native to the central coast. You can see from the pictures on our site how unique the grill itself is: made of iron with a hand crank that lifts and lowers the grill over the red oak coals, which means we can pinpoint the tenderness of the meat beautifully.
